
Sweet & Hot Hibiscus Mimosa

A drink that looks like it was made for a beautiful brunch. Delicate bubbles, orange freshness, a floral note of hibiscus and a sweet-and-spicy honey syrup. This isn't just a mimosa — it's its more interesting, festive and slightly bold version.
Preparation

Make the syrup. Combine the spicy honey with warm water 1:1 until the honey fully dissolves. Let it cool a little.

Start with hibiscus. Place the hibiscus flower in syrup at the bottom of a tall glass.

Add the bubbles. Fill the glass about ⅔ with non-alcoholic sparkling wine or sparkling tonic.

Add the honey syrup. Pour in 2 tbsp of the spicy honey syrup.

Finish with orange. Top with orange juice and stir very gently. Garnish with an orange slice and serve immediately.

- —Want more heat? Add a little more spicy honey syrup.
- —Want a lighter taste? Use more sparkling water or a dry non-alcoholic sparkling drink.
- —Want a fruitier version? Add a little grapefruit or pineapple juice.
- —Don't stir too hard — that keeps the bubbles. Best enjoyed with avocado toast or a cheese board.
