
Peach Cadillac Margarita Mocktail with Spicy Honey
The Peach Cadillac Margarita is a summer mocktail that tastes like sunshine, peaches and a small party in a glass. It brings together juicy peach sweetness, lime acidity, an orange note and hot honey syrup. The drink is bright, refreshing and beautifully balanced: soft peach first, then citrus freshness, and finally a light sweet-and-spicy warmth. The salted rim makes it even more interesting — it lifts the peach, freshens the lime and balances the honeyed sweetness. Perfect for summer, brunch, a party on the terrace, or an evening when you want something pretty, fruity and full of character.

Make the peach syrup. In a small saucepan, mix the spicy honey and water in a 1:1 ratio and add the peach slices. Set over low heat and warm for about 10–11 minutes, until the peaches are soft and fragrant. Muddle them gently with a spoon to release more juice, strain the syrup and let it cool.

Prepare the glasses. Run a lime wedge around the rim. If you like, add a very thin layer of spicy honey to the edge — the salt will hold better and the flavour will be more sweet-and-salty. Dip the rim into coarse salt.

Mix the drink. In a shaker with ice, combine the non-alcoholic tequila alternative or citrus sparkling base, the peach hot honey syrup, the orange juice and the fresh lime juice. Shake well for 20–30 seconds until cold, fresh and balanced.

Serve. Fill the prepared glasses with fresh ice and strain the drink into them.

Final touch. Garnish each glass with a slice of fresh peach and a lime wedge. Serve immediately, while the drink is cold, fragrant and at its most summery.
Chef's tips
- —Want more heat? Add a little more spicy honey to the syrup, or make a light honey rim on the glass.
- —Want a stronger peach flavour? After simmering, let the peaches sit in the syrup for another 15–20 minutes, then strain.
- —Want a lighter drink? Top it up with soda or sparkling water in the glass. For a brighter acidity, add more lime juice.
- —For a spicy rim, mix the salt with a pinch of chilli or Tajín.
- —The syrup can be made ahead: it keeps well in the fridge for a few days and works in lemonades, tea, mocktails or desserts.
- —Choose ripe peaches — they are what give the drink its natural sweetness and summer aroma.
- —Bonus: peach salsa with spicy honey. Dice fresh peaches, add a little red onion, coriander, lime juice and a few drops of spicy honey. Stir — and you have a quick summer salsa for tacos, grilled meat, nachos or a cheese board.
