Bright citrus meets clean Caribbean rum and a smooth ribbon of sweet heat. Crisp, refreshing and just spicy enough to keep things interesting.
Preparation

Make the syrup. Combine the spicy honey and hot water in equal parts and stir until fully dissolved. Let it cool a little.

Build the cocktail. In a shaker with ice, add the rum, lemon juice and spicy honey syrup.

Shake to chill. Shake vigorously for 10–15 seconds.

Strain and serve. Strain into a chilled cocktail glass or a rocks glass with fresh ice.

Garnish. Rest a dried red chilli on the rim or on top of the drink.
Chef's tips
- —Herbal note: add a few basil leaves before shaking.
- —Sparkling finish: top with soda water for a lighter version.
- —Tropical twist: add 15 ml of pineapple juice for island energy.
- —Serve with light seafood or tropical snacks.
