A tropical dream in a glass. Created by Erik Astman of Oishii — a rare postcard from paradise: a sunny beach, the warmth of a tropical breeze and an unexpected Max Hot Honey kick.
Preparation

Spicy honey syrup. Combine the spicy honey and water in equal parts.

Choose your rum. Pick your favourite rum — it unlocks the tiki vibe.

Juice mix. Pineapple juice brings the tropical party, sudachi (or lime) a bright citrus greeting.

Mixing ritual. Add all ingredients to a shaker. Shake as if dancing to island music.

The finish. Fill a glass with ice, pour in the mix. Add a dash of tiki bitters and garnish with lime and a sprig of fresh mint.
Chef's tips
- —No sudachi? Lime works great.
- —Try different rums.
- —Want more heat? Add more spicy honey. Serve with shrimp skewers, grilled fruit or spicy Caribbean snacks.
