Grilled Shrimp with Spicy Honey
Grilled shrimp with spicy honey is a simple yet stunning dish that combines juicy seafood, the aroma of garlic, and a vibrant balance of sweet and spicy flavors. Thanks to quick cooking and a rich marinade, the shrimp develop a beautiful caramelized crust and a light smoky aroma from the grill. The special character of this dish comes from the spicy honey, which creates the perfect contrast between sweetness, a slight citrus tang from the lemon juice, and the warmth of oregano. This combination makes the shrimp incredibly aromatic and juicy.
Preparation
- 1
Thread the shrimp onto skewers, 6–7 per skewer. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning on the grill.

- 2
When threading the shrimp, pierce them in two places — near the tail and near the head end. This prevents them from spinning when you flip the skewers.

- 3
Grate the garlic into a bowl. Add the olive oil, oregano, lemon juice, spicy honey, salt, and black pepper. Whisk everything together thoroughly until you have a smooth, aromatic marinade.

- 4
Brush the shrimp with the marinade on both sides and let them sit for a few minutes to absorb the flavors.

- 5
Preheat the grill to medium heat (about 200°C) and lightly oil the grates.

- 6
Place the skewers on the grill. Brush with half the marinade. Cover and cook for about 3 minutes. Flip the skewers, brush with the remaining marinade, and cook for another 3 minutes until the shrimp are pink and opaque.

- 7
Remove the shrimp from the grill and serve warm or at room temperature, drizzled generously with spicy honey.

Chef's tips
- —Medium or large shrimp work best for this recipe — they hold their shape better on the grill. Make sure the shrimp are peeled and deveined before cooking.
- —When threading shrimp onto skewers, pierce them in two places — near the tail and near the head end. This prevents them from spinning when you flip the skewers.
- —Don't overcook the shrimp — they cook very quickly, about 2–3 minutes per side. Overcooked shrimp can become tough and rubbery.
- —For a beautiful caramelized glaze, drizzle a little extra spicy honey over the shrimp just before serving.
