Take the cream cheese out of the fridge ahead of time — soft cream cheese is much easier to mix with the other ingredients.
For extra crispy bacon, switch the oven to broil mode for the last 2–3 minutes of cooking.
This appetizer can be prepared in advance: simply store the assembled poppers in the fridge and bake them just before serving.

Step-by-step instructions:
Preheat the oven to 400°F (200°C).

Slice the jalapeños in half lengthwise and remove the seeds and inner ribs.

In a medium bowl, combine the cream cheese, shredded cheddar, spicy honey, smoked paprika, garlic powder, salt, and cayenne pepper. Mix until smooth and creamy.

Fill each jalapeño half with the cheese mixture.

Wrap each stuffed pepper half with a piece of bacon.

Secure the bacon with a toothpick so it stays in place during baking.

Place the poppers on a baking sheet lined with parchment paper or foil. Bake for 20–25 minutes until the bacon is golden and crispy.

Remove the poppers from the oven, transfer to a plate, and drizzle generously with spicy honey before serving.
