A bold balance of sweet heat, bright citrus and warm whiskey. Orange adds depth and colour, lemon holds the edge, and honey brings the signature kick. The foam on top is pure texture and drama.
Preparation

Dry shake first. Add the bourbon, lemon juice, orange juice, spicy honey and egg white to a shaker without ice. Shake vigorously for 10–15 seconds to build the foam.

Shake with ice. Add ice and shake for another 10–15 seconds until chilled.

Strain and serve. Double-strain into a chilled glass without ice for a silky texture.

Garnish. Rest a dried citrus wheel on top. For effect, drizzle a thin line of spicy honey across the foam and drag a toothpick through it in a zigzag.

- —Smoky twist: use a smoked bourbon.
