
Honey Mustard Sauce with Spicy Honey
A quick, versatile sauce combining the creaminess of mayo, the tang of mustard, a light lemon acidity and the sweet-spicy character of honey. It's thick, smooth and rich, so it works equally well as a dip, a sandwich spread, a burger sauce or an accompaniment to chicken, fish and roasted vegetables. Classic honey mustard gets a brighter character here thanks to the spicy honey.
Preparation

Combine the base. In a small bowl add the mayonnaise, mustard, spicy honey and lemon juice.

Mix. Whisk or stir thoroughly with a spoon to a completely smooth, uniform consistency.

Adjust the taste. Add salt to taste; if needed, more honey (sweeter and spicier), mustard (more piquant), lemon (fresher) or mayo (softer and creamier).

Let it rest. You can serve it right away, but after 10–15 minutes in the fridge the flavour becomes more cohesive. Stir again before serving.
Chef's tips
- —Use Dijon mustard — it gives a smooth texture and balanced flavour.
- —Don't add much salt at first: mayo and mustard may already be salty.
- —Want a spicier version? Add more spicy honey, sriracha or chilli flakes.
- —Want a milder taste? Increase the mayo.
- —For an Asian accent add a little sriracha or wasabi; for a Mexican one — chilli powder and cilantro.
- —For a smoky flavour add a pinch of smoked paprika.
- —Before serving with hot dishes, let the sauce warm slightly at room temperature.
- —Because of the mayo, keep the sauce chilled and don't leave it out for long.
