Balsamic Dressing with Spicy Honey
Sometimes a simple dressing is all it takes to transform a salad — or any other dish. This balsamic vinaigrette with spicy honey combines the rich tang of balsamic vinegar, the softness of olive oil and a sweet-and-spicy honey accent into a perfectly balanced flavour. Dijon mustard adds a gentle bite and helps the dressing emulsify, while shallot and fresh garlic give it depth and aroma. It works beautifully not only on salads but also as a marinade for chicken, vegetables or grain bowls. The sauce comes together in just a few minutes, yet it can turn even the simplest salad into something special.
Preparation
- 1
Add the balsamic vinegar, spicy honey, Dijon mustard, shallot, garlic and salt to a bowl. Mix everything well so the flavours start to come together.

- 2
Gradually pour in the olive oil while whisking constantly.

- 3
Or simply put all the ingredients in a jar with a lid and shake well. Keep mixing until the dressing is smooth and slightly creamy.

- 4
Let the dressing sit for about 30 minutes so the flavours meld. Taste it and add more salt or honey if you like.

- 5
Drizzle the dressing over a salad, vegetables or a grain bowl, or use it as a marinade.

Chef's tips
- —For the best result, use honey at room temperature — it blends far more easily with the other ingredients. Fresh garlic also gives a much richer aroma than dried powder.
- —Once chilled, the olive oil may thicken slightly — just leave the dressing at room temperature for a few minutes and shake it well before using.
- —For a brighter flavour, add fresh herbs or a splash of citrus juice. If you like a stronger garlic aroma, feel free to add more.
