BBQ Sauce with Spicy Honey

A thick, rich, aromatic sauce with a clear balance of sweetness, tang, smokiness and pleasant heat. Ketchup builds the classic tomato base, vinegar adds tang, molasses or brown sugar brings caramel sweetness, and spicy honey forms the signature sweet-heat flavour. Liquid smoke amplifies the BBQ character and makes the sauce taste like it cooked low and slow by a real grill.

Preparation

    Combine the ingredients. In a heavy-bottomed pan add ketchup, white vinegar, spicy honey, molasses or sugar, liquid smoke, salt, garlic and onion powder.

    Whisk well so the ketchup, honey and molasses fully combine. At first the sauce is thin — it thickens as it cooks.

    Bring to a gentle simmer over medium heat, stirring constantly. Don't leave it unattended — honey and sugar stick to the bottom quickly.

    Lower the heat and simmer ~30 minutes at a gentle bubble, stirring occasionally, especially near the end.

    Check the consistency: the finished sauce is thicker, glossy and coats a spoon in a thin even layer (it thickens more when cooled).

    Adjust the taste: more honey — sweeter and spicier, black pepper — warmer, liquid smoke — smokier, water — if too thick, vinegar — if you want more tang.

    Remove from heat and let it sit 10–15 minutes to cool a little before transferring to a jar.

    Use warm or at room temperature. For glazing, apply near the end of cooking.

Chef's tips

  • Use a heavy-bottomed pan for even heating.
  • Simmer over low heat — a hard boil can cause scorching.
  • Stir regularly, especially once the sauce starts to thicken.
  • Don't judge the thickness while hot — it thickens as it cools.
  • For a smokier taste add more liquid smoke or smoked paprika; for depth — 1–2 tsp Worcestershire sauce.
  • For a spicier version use more spicy honey or add black pepper.
  • Apply as a glaze near the end of cooking so the honey and sugar don't burn.
  • Make a double batch and label the jar with the date.
