Preparation

Mixing ritual. Add the gin, apricot liqueur, chamomile tea, fresh lemon juice and spicy honey to a shaker.

Egg-white magic. Add one medium egg white. Dry-shake vigorously for 5 seconds. Add ice and shake for another 5 seconds.

The finish. Strain into a coupe or martini glass. Let it settle a little. Gently place a thin apricot slice, scatter fresno pepper slices and express lemon zest over the rim.
