Preparation

    Mixing ritual. Add the gin, apricot liqueur, chamomile tea, fresh lemon juice and spicy honey to a shaker.

  2. 2

    Egg-white magic. Add one medium egg white. Dry-shake vigorously for 5 seconds. Add ice and shake for another 5 seconds.

  3. 3

    The finish. Strain into a coupe or martini glass. Let it settle a little. Gently place a thin apricot slice, scatter fresno pepper slices and express lemon zest over the rim.

Chef's tips

  • Want more heat? Add more spicy honey.
  • Try different gins for a new flavour profile.
  • Serve with cedar-plank salmon, sweet-and-spicy honey butter or spicy-honey roasted nuts.
