
Green Pea and Feta Toasts with Spicy Honey
A fresh, bright and very simple appetiser for a spring brunch, a party or a light dinner. Tender green peas are blended with mint, garlic, lemon, olive oil and spicy honey into a creamy, slightly textured spread. Salty feta adds contrast, lemon refreshes, and a final drizzle of spicy honey ties it all into one balanced sweet-heat flavour.
Preparation

Prep the peas. Thaw them fully (you can cover with hot water for 2–3 minutes, then drain and dry). At room temperature they mash more easily.

Make the spread. Put the peas in a bowl, add olive oil, minced garlic, mint, spicy honey, lemon zest and juice. Season with salt and pepper.

Mash with a fork or masher, not to a fully smooth purée — leave some whole peas for texture. Taste and adjust lemon, salt or honey.

Toast the baguette. Slice into 15 pieces and lightly toast in the oven, toaster or a dry pan until golden and crisp at the edges.

Assemble. Spread a generous amount of pea mixture on each slice, keeping some texture.

Add the feta. Sprinkle each toast with crumbled feta — its salty creaminess balances the sweetness of the peas and honey.

Finish. Add black pepper, a few torn mint leaves and a little more spicy honey. Serve immediately while the baguette is crisp.

- —Room-temperature peas are easier to mash.
- —Don't blend to a fully smooth purée — a light texture makes the toasts more interesting.
- —Don't over-dry the baguette: crisp but easy to bite.
- —Fresh mint matters — it adds a clean, cool note.

- —Want more heat? Add chilli flakes.
- —Want a creamier version? Replace some feta with goat or cream cheese.
- —The pea mixture can be made ahead and kept in the fridge, toasting the bread just before serving.
