
Hot Pepperoni and Mozzarella Sandwich with Spicy Honey
A quick homemade take on pizza on crispy ciabatta. A golden bread base, rich tomato sauce, gooey mozzarella and spicy pepperoni make a familiar, appetising flavour, while a final drizzle of spicy honey adds sweetness, highlights the salami's saltiness and leaves a pleasant piquant finish. It's ready in 15 minutes and disappears almost instantly.
Preparation

Heat the oven to 200°C and line a tray with parchment.

Cut the ciabatta lengthwise; optionally press the crumb a little so the filling holds.

Lightly brush the cut sides with olive oil (not too much, so the bread doesn't get greasy).

Spread the tomato paste or sauce evenly. If the paste is concentrated, mix with a spoon of oil or water.

Grate or slice the mozzarella and place over the tomato base.

Lay the pepperoni in a single layer without piling it, so it browns evenly.

Optionally sprinkle oregano, pepper or chilli flakes and bake 8–10 minutes (for a crust — broiler for the last minute).

Take out the sandwiches and immediately drizzle generously with spicy honey. Rest 1–2 minutes, cut and serve hot.
Chef's tips
- —Use thick tomato sauce — too thin soaks the bread.
- —Don't overload the ciabatta so it stays crisp.
- —Dry the mozzarella well, especially if it's in brine.
- —Add the spicy honey after the oven so it keeps its aroma.
- —Want more crunch? Pre-toast the ciabatta 3–4 minutes without toppings.
- —Want freshness? Add arugula or basil after baking. Serve immediately.
