
Crispy Burrata and Prosciutto Toast with Spicy Honey
A quick appetiser with restaurant character that's easy to make at home. Golden bread with the aroma of butter and garlic meets creamy burrata, salty prosciutto, fresh arugula and basil, while a final drizzle of spicy honey adds sweetness, a light piquancy and balances the richness of the cheese and meat. Perfect for breakfast, brunch, a light dinner or a striking appetiser for guests — it comes together in minutes yet looks like it was just served at your favourite café.

Prep the bread. Choose sturdy bread that holds toppings well and cut two large slices ~1.5–2 cm thick.

Heat a pan over medium, add the olive oil and butter and wait until the butter melts and starts to foam lightly.

Toast the bread 2–3 minutes per side — golden and crisp outside, still a little soft inside.

Add the garlic. Halve the clove and, while the toasts are hot, rub them with the cut side. Don't press too hard so the aroma doesn't turn sharp.

Add the burrata. Blot it with a paper towel, divide it between the toasts and gently open it with a spoon, spreading the creamy centre.

Add greens: a small amount of arugula and whole or hand-torn basil leaves.

Add the prosciutto. Fold the slices into light waves over the cheese and greens without pressing — a voluminous arrangement looks more appetising.

Add the spicy honey. Drizzle generously right before serving: use mild honey for a light piquancy, medium or extra-hot for contrast.

Finish. Optionally add black pepper, a few drops of olive oil or lemon zest. Serve immediately while the bread is crisp.
Chef's tips
- —Choose sturdy bread (ciabatta, baguette, country or sourdough) — too soft and it gets soggy from the burrata.
- —Don't overheat the butter: it should give a golden aroma, not burn.
- —Rub the garlic on the toast while it's hot — the aroma is softer and more even.
- —Dry the burrata well: excess liquid soaks the bread.
- —Don't add salt right away — the prosciutto is already salty enough.
- —Add the spicy honey at the very end so the toast stays crisp longer.
- —Want more freshness? Add cherry tomatoes or lemon zest. More texture — toasted pistachios or pecans.
- —For a brighter taste, add a few drops of balsamic glaze. Serve immediately — the dish is best freshly assembled.
