
Sweet Heat Margarita Mocktail with Spicy Honey
The Sweet Heat Margarita is a vibrant alcohol-free take on the classic margarita: plenty of lime freshness, a light citrus bitterness, a salted rim and that familiar sweet-and-spicy accent from hot honey syrup. It refreshes from the very first sip. Lime brings the acidity, orange adds a soft fruity note, and spicy honey makes the flavour deeper and more interesting: first the citrus freshness, then the honeyed sweetness, and finally a gentle piquant warmth. The perfect mocktail for a party, taco night, brunch — or any moment when you want something pretty, a little salty, a little sour and full of character.
Preparation

Make the syrup. Mix the spicy honey with warm water in a 1:1 ratio. Stir well until the honey dissolves completely. Let it cool a little before using.

Salt the rim. Run a lime wedge around the rim of the glass, then dip it into coarse salt. This is more than decoration — the salt lifts the lime, the honeyed sweetness and the gentle heat.

Mix the drink. In a shaker with ice, combine the non-alcoholic tequila alternative or citrus sparkling base, the fresh lime juice, the orange juice and the hot honey syrup. Shake well for 10–15 seconds so the drink chills and balances out.

Serve. Strain the drink into the prepared glass over ice.

Final touch. Garnish with a lime wedge. If you like, add a little lime zest on top for a brighter aroma.
Chef's tips
- —Want more heat? Add a little more hot honey syrup. Want it sharper? Increase the lime juice. Want it lighter? Top it up with sparkling water.
- —Want a stronger margarita vibe? Use a wide-rimmed glass and a generous salted rim.
- —For a spicy version, mix the salt with a pinch of chilli or Tajín.
- —The syrup can be made ahead. Keep it in the fridge and add it to lemonades, tea, mocktails or sauces.
