Sting Like a Bee is a drink with character: bright, citrusy, a little tart, softly sweet and with a pleasant spicy finish from hot honey. Grapefruit brings a fresh bitterness, lemon adds clean acidity, and spicy honey balances it all with sweetness and warmth. The foam on top makes the drink look striking and properly cocktail-like, even without alcohol. It is the perfect mocktail for a party, for a beautiful serve, or for any moment when you want something beyond the obvious: not just lemonade, but a real drink with depth, texture and a final kick of flavour.

Preparation

    Build the flavour base. In a shaker, combine the chilled black tea or non-alcoholic bourbon alternative, the grapefruit syrup, the grapefruit juice, the lemon juice and the spicy honey. This is where the core balance forms: citrus bitterness, acidity, honeyed sweetness and a gentle piquant warmth.

    Add the foam. Add the aquafaba or egg white — this is what creates the dense, smooth foam.

    Dry shake. First shake the shaker without ice for about 10–15 seconds. This builds a denser, smoother foam.

    Chill the drink. Add ice to the shaker and shake again until the drink is properly cold.

    Serve. Strain into a chilled coupe or a short cocktail glass. A delicate foam should form on top — that is what makes the serve feel premium.

    Final garnish. Add a few drops of non-alcoholic bitters or the aroma of grapefruit zest on top of the foam. For a wow effect, make a simple honeycomb decoration: use a stencil to dot the bitters or draw a light pattern on the foam.

Chef's tips

  • Want more heat? Add a little more spicy honey. Want it more citrusy? Increase the grapefruit or lemon juice.
  • Want a softer drink? Use more black tea, or add a splash of soda after mixing.
  • For a vegan version, use aquafaba instead of egg white. Aquafaba is the liquid from a can of chickpeas — it whips well and creates a lovely foam.
  • You can skip the foam entirely: if you would rather not use aquafaba or egg white, just leave it out — the flavour will still be bright.
  • For a pretty rim, mix sea salt with a drop of spicy honey and apply it to the edge of the glass.
  • Do not overdo the bitterness: the grapefruit should be noticeable, but not drown out the honeyed sweetness.
