
Sting Like a Bee Lemon Mocktail with Spicy Honey
Sting Like a Bee has character from the first sip. It is bright, citrusy, softly sweet, and carries that warm spicy finish that sets it apart from ordinary lemonade. Lemon brings a fresh acidity, orange adds soft fruity depth, and spicy honey balances the flavour beautifully, leaving a gentle piquant sting at the end. The foam on top makes the drink look premium and properly cocktail-like. The perfect mocktail for a party, a beautiful dinner, or any moment when you want something out of the ordinary: refreshing, fragrant, with texture and a wow serve.
Preparation

Make the syrup. To help the spicy honey blend into the drink, make a quick syrup: mix it with hot water in a 1:1 ratio and stir until smooth. Let it cool a little before using.

Build the base. In a shaker, add the chilled black tea or non-alcoholic bourbon alternative, the lemon juice, the orange juice and the spicy honey or syrup. This is the flavour base: citrus freshness, honeyed sweetness and a gentle spicy warmth.

Add the foam. Add the egg white or aquafaba.

Dry shake. Shake the shaker without ice for 10–15 seconds. This builds a denser, smoother foam.

Chill the drink. Add ice to the shaker and shake again for 10–15 seconds until the drink is properly cold.

Serve. Strain into a chilled coupe or a short glass without ice. For an even silkier texture, strain through a fine sieve.

Garnish. Decorate with a dried lemon or orange wheel. For a striking serve, add a few fine drops of spicy honey onto the foam and drag a toothpick through them to draw a light pattern.
Chef's tips
- —Want more heat? Add a little more hot honey syrup. Want a softer flavour? Use more orange juice and a little less lemon.
- —Want a spicier character? Add a pinch of cinnamon or a few drops of non-alcoholic orange bitters.
- —For a vegan version, use aquafaba instead of egg white. Aquafaba is the liquid from a can of chickpeas — it whips well and creates a lovely egg-free foam.
- —You can skip the foam: just leave out the egg white or aquafaba — the flavour stays bright.
- —Hot honey syrup mixes in far better than thick honey, especially when the drink is served cold.
- —For a beautiful serve, use a chilled glass and a dried citrus wheel on top.
