The Rum & Lemon Dealer is a bright, citrusy and slightly cheeky drink in the style of a tropical cocktail — but without the alcohol. Fresh lemon acidity meets the soft sweetness of hot honey syrup, and the result refreshes and warms at the same time, leaving a light piquant finish. This is not just lemonade: it is a grown-up, stylish take on a citrus mocktail — clean flavour, striking presentation, a spicy honey accent and a dried red chilli as the final touch. Perfect for a party, a summer evening, or any moment when you want something fresh, beautiful and full of character.

Preparation

    Make the syrup. Mix the spicy honey with hot water in a 1:1 ratio. Stir well until the honey dissolves completely and the syrup is smooth. Let it cool a little — it will blend better with the other ingredients and will not melt the ice too quickly.

    Build the base. In a shaker with ice, add the non-alcoholic white rum alternative or the chilled coconut tea. Pour in the fresh lemon juice and the hot honey syrup.

    Chill it down. Shake for 10–15 seconds until the drink is cold, fresh and balanced.

    Serve. Strain the drink into a chilled coupe for a more elegant presentation — or serve it in a lowball glass over ice for a more relaxed, summery format.

    Garnish. Perch the dried red chilli on the rim of the glass, or place it carefully on top as a decorative accent. It underlines the sweet-heat vibe and makes the presentation more striking.

Chef's tips

  • Want more heat? Add a little more hot honey syrup. Want a lighter version? Top it up with soda or sparkling water.
  • Want a tropical accent? Add 15 ml of pineapple juice. For a herbal note, drop a few basil leaves into the shaker before mixing.
  • Fresh lemon is a must — it is what gives the drink its clean, bright acidity.
  • Do not add too much water to the syrup. The 1:1 ratio keeps the honey flavour rich and the syrup easy to pour.
