
Life's a Peach Mocktail with Spicy Honey
Life's a Peach is a summer drink that tastes like a ripe peach, sunshine and a small holiday in a glass. It brings together juicy peach, fresh lemon acidity, light soda bubbles, a delicate foam and hot honey syrup. The result is soft, fruity, refreshing and a little unexpected: peach sweetness first, then lemon freshness, and finally a warm piquant finish. The perfect mocktail for summer, a party on the terrace, brunch, or any moment when you want something beautiful, light and full of character.
Preparation

Make the hot honey syrup. Mix the spicy honey with warm water in a 1:1 ratio and stir until the honey dissolves completely. This syrup blends into cold ingredients more easily and spreads the sweet-and-spicy flavour evenly.

Prepare the peach. Take half a ripe peach, cut it into pieces and add it to the shaker. Muddle it lightly so it releases its juice and aroma — there is no need to turn it into a purée, just wake the fruit flavour up.

Build the base. To the peach, add the non-alcoholic tequila alternative or chilled green tea, the fresh lemon juice and the hot honey syrup.

Add the foam. Add the egg white or aquafaba.

Dry shake. Shake the shaker without ice for 10–15 seconds. This creates a delicate, smooth foam.

Chill the drink. Add ice and shake again for 10–15 seconds until the drink is properly cold.

Serve. Strain into a tall glass over ice. For a smoother texture, strain through a fine sieve to remove the pieces of peach.

Add the bubbles. Top with a splash of soda or sparkling water. Stir gently to keep the foam and the lightness of the drink.

Final touch. Garnish with a peach slice, lemon zest or a few drops of spicy honey on top. Serve immediately, while the drink is cold, foamy and at its freshest.
Chef's tips
- —Want more heat? Add a little more hot honey syrup. Want a peachier flavour? Use a very ripe peach, or add a little peach purée.
- —Want a lighter drink? Top up with more soda. For a brighter acidity, add a little more lemon juice.
- —For a vegan version, use aquafaba instead of egg white. Aquafaba is the liquid from a can of chickpeas — it whips well and creates a lovely egg-free foam.
- —You can skip the foam: just leave out the egg white or aquafaba — the drink will be lighter but still delicious.
- —Do not shake too long with ice: the drink should chill, but not turn watery.
- —Bonus: peach salsa with spicy honey. Dice a ripe peach, add a little red onion, coriander, lime juice and a few drops of spicy honey. Stir — and you have a fresh summer salsa for tacos, prawns, grilled meat or a cheese board.
