
The Boozy Bee Mocktail with Pineapple and Spicy Honey
The Boozy Bee is a tropical drink that tastes like a small holiday in a glass. Juicy pineapple, citrus acidity, a light spice, aromatic bitters and sweet-and-spicy hot honey syrup build a bright, sunny and full-bodied flavour. Pineapple brings the fruity sweetness, lime or sudachi adds freshness, and the spicy honey gives it depth: tropical softness first, then a citrus accent, and finally a warm piquant finish. The perfect mocktail for a summer party, a BBQ, an evening on the terrace — or any moment when you want something cold, beautiful and full of tropical vibes.
Preparation

Make the hot honey syrup. Mix the spicy honey with warm water in a 1:1 ratio and stir until the honey dissolves completely. This syrup blends into cold ingredients more easily and spreads that signature sweet-and-spicy flavour evenly.

Build the tropical base. In a shaker, combine the non-alcoholic rum alternative or chilled coconut tea, the pineapple juice, the sudachi or lime juice and the hot honey syrup. Pineapple brings tropical sweetness, citrus freshens it up, and the spicy honey adds a warm piquant finish.

Add the bitters. Add 1–2 drops of non-alcoholic tiki bitters or aromatic bitters — they make the flavour deeper, spicier and more like a complex tropical cocktail.

Chill the drink. Add ice to the shaker and shake well for 10–15 seconds until the drink is cold, bright and balanced.

Serve. Fill a glass with ice and strain the drink into it.

Final touch. Garnish with a lime wedge, fresh mint or a small piece of pineapple. Clap the mint lightly between your palms before adding it, to release the aroma.
Chef's tips
- —Want more heat? Add a little more hot honey syrup. Want a more tropical flavour? Add a few drops of coconut water, or use coconut tea as the base.
- —No sudachi? Fresh lime works perfectly as a substitute. And fresh juice always beats the carton kind — it gives a clean, bright acidity.
- —Want a lighter drink? Top it up with soda or sparkling water.
- —For a stronger tiki vibe, add a piece of pineapple, mint and plenty of ice.
- —Do not overdo the bitters: 1–2 drops are enough to add depth without drowning out the pineapple and honey.
- —Bonus: tropical nuts with spicy honey. Toss your favourite nuts with spicy honey, add some coconut flakes and spread them on a baking tray. Bake at 175°C for about 8–10 minutes, until fragrant and lightly caramelised.
